When the sugar is cooking, whip the egg whites from the bowl of a stand mixer using a whisk attachment. Preserve it at reduced velocity until whites are foamy (it should really appear like the foam in addition to beer).  When foamy, commence whipping at medium speed.  Before you add the sugar, lessen the speed slightly.This is the cake to get a c
